Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set them aside.
  3. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until quinoa is cooked and liquid is absorbed.
  4. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, olive oil, lemon juice, garlic, dried oregano, salt, and pepper. Mix well.
  5. Stuff each bell pepper with the quinoa mixture and place them in a baking dish. Cover with aluminum foil.
  6. Bake for 25-30 minutes or until the peppers are tender.
