- 8 oz macaroni pasta
- 1/4 cup truffle oil
- 2 cups shredded Gruyère cheese

- 2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
- Cook the macaroni pasta according to package instructions. Drain and set aside.
- In a large saucepan, heat the truffle oil over medium heat. Add the flour and whisk constantly for 1-2 minutes to create a roux.
- Gradually pour in the milk while continuing to whisk, making sure there are no lumps. Cook for about 5 minutes or until the sauce thickens.
- Remove the saucepan from heat and stir in the Gruyère, white cheddar, and Parmesan cheeses until they melt and the sauce is smooth.
- Season the cheese sauce with salt, pepper, and nutmeg.
- Add the cooked macaroni to the cheese sauce and stir until well coated.
- Transfer the mac and cheese mixture to a greased baking dish and sprinkle breadcrumbs on top.
- Broil in the oven for 2-3 minutes or until the breadcrumbs are golden brown.
- Garnish with chopped fresh parsley and drizzle with a bit more truffle oil before serving.
